Abbi’s Cilantro Lime Chicken
Okay, so sometimes you just need a night to yourself— to cook.
At least I do. I haven’t cooked something “different” in a while, and those of you who know me well, know that I LOVE to cook…so after dropping Jordan off at work and picking up some fresh produce and meats, I decided–
I have the house to myself! I’m gonna cook!
I have a spotless kitchen, that I cleaned topped to bottom, a major necessity to cooking something AMAZING!
Did I mention I picked up some fresh tulips, too? Oh yeah, I did. And they look lovely on my kitchen table!
So tonight I decided I was going to create my very own take on Cilantro Lime Chicken.
Now I don’t really believe in measuring so, bear with me–and because I was dining alone tonight, this will be a one portion recipe!
Abbi’s Cilantro Lime Chicken
Take a frying pan, and pour a little extra light olive oil in.
Add two cork turns of rock salt. Add a dash of garlic, and a dash of rosemary. Let simmer.
Chop up some fresh cilantro found at your local produce vendor, or farmer’s market.
Chop up 4 slivers or lime.
Grab your chicken breast and place it into your simmering pan of yummy-ness. Let simmer on both sides.
After both sides have been cooked, add half of your freshly chopped cilantro on top, along with one squeeze of lime. Sprinkle with one click of rock salt. (I used about a quarter of the bundle of cilantro)
Let simmer. Doesn’t it smell so good?!
Flip, and add the other half of your cilantro, one squeeze of lime, and this time a dash of rosemary.
Let simmer.
This should be your last step at the stove, make sure your chicken is thoroughly cooked, by cutting into it with a knife to see
Safety first!
Turn your stove off, and allow the chicken to settle, take your third lime squeeze and pinch over it.
Now plate your dish with your yummy chicken, and the last lime squeeze, this lime is for your flavor preference!
You should have a tender, juicy chicken breast with amazing flavor!
